Flourless Pancakes

This is a quick and simple pancake recipe that can be tweaked in an infinite number of ways… have fun mixing and matching.

Recipe makes: 3-4 pancakes.


  • 1 cup almond meal (finely ground)
  • 3 eggs
  • 1/4 tsp vanilla essence
  • 1/4 tsp cinnamon or nutmeg
  • blueberries, strawberries or diced fruit of choice


  1. Mix ingredients together.
  2. Heat oil pan over medium flame.
  3. Pour in to desired pancake size.
  4. Cook until underside is brown and then flip.
  5. Serve with blueberries/strawberries/fruit on top.
