This is a great way to start the day, or as a between-meal snack, and is packed with plant-based omega-3 essential fatty acids, and a decent protein boost too.
1 handful baby spinach
1/2 a cucumber
1/2 a banana (sub 1/2 an apple, pear, pineapple or seasonal fruit)
1 level Tbsp chia seeds
2 level Tbsp linseeds (whole seeds if using nutribullet/high speed, or freshly ground flaxseed if using a regular blender)
1 Tbsp hemp protein powder
Dollop of coconut yoghurt
1/2 cup filtered water (add more if too thick – the chia and flaxseed will soak it up)
Blend together in your nutribullet or high speed blender, and enjoy!
